Does this require Google Sheets?

No. Populate Anything includes sources such as WordPress posts, users, Gravity Forms entries, and database records. Google Sheets is a separate, optional Connection.

Will changing a rate rewrite old submissions?

No. Updating the source changes what the form can populate next; it does not automatically replace the values in previously submitted entries.

What about quantity tiers or repeatable line items?

Use the advanced-pricing solution for that. This example uses a simple service rate times session count; Nested Forms and Advanced Calculations handle the more involved order structure and pricing rules.
