Does this assign guests to specific tables?

This recipe counts seats in a sitting. It does not model which physical table each party uses; plan a separate setup if table combinations or floor plans matter.

Why does tomorrow still have seats when today is full?

The inventory resource is scoped to Reservation Date. Each time choice gets a separate count for each selected date.

Do guests receive a reminder just by installing the plugins?

No. Write the notification and configure its date and time with Notification Scheduler; test your site’s scheduled email delivery before using it for guests.
