A product field holds the normal price and a date field asks when they need it. Every rule below adjusts that pair.
GP Conditional Pricing
Ten per cent off while the date is more than two weeks out, standard in between, twenty-five per cent on inside four days. Each condition compares that date against today, and day-of-the-week logic gives a weekend its own rate.

Your closed days come off the picker and individual dates can be excepted, so nobody buys a rush slot you would have to refund.
