How many outcomes can it hold?

As many as you write. The build this came from carries more than thirty: each category has a write-up for scoring highest and another for coming runner-up, plus one for a score too spread out to call.

Where does the result actually appear?

On the form’s confirmation, where the stored results are still in context for the conditional shortcode to read. To have it styled like the rest of the site, or to give the visitor a link they can reopen, point the confirmation at a page and add GP Post Content Merge Tags.

Do they have to give an email address to see it?

That is your call. The result appears on submission either way, so a required email field is what turns the quiz into a lead magnet; leave it optional and the write-up still shows.
