Are entry views private automatically?

No. Entry Blocks can publish public views, so a private portal needs login protection and ownership restrictions. Hiding a link or a column is not an access rule.

Does Entry Blocks move requests through statuses?

It displays the field values you choose. In this recipe, staff update a custom status field; an automated status process would need to be configured separately.

Can customers edit their requests?

Yes. Add an edit view and define which fields they may change. The editable-submissions solution covers owner access and excluding staff-only fields.
