Leave publication consent unchecked by default, then configure the wall to include only checked entries. That privacy behavior comes from your form and block filters, not an Entry Blocks default. A donor who opts in can choose the permitted display name; keep contact and payment details off the wall.
No. The wall carries only the fields you put on it, so the amount can stay on the entry where the tier filter still reads it.
Only donors with an account on your site: front-end editing belongs to the entry's owner, or to a role you grant the capability. For an anonymous gift, you make the change.
